Histological studies of the muscle tissue of the bactrian camel meat in the process of autolysis

The purpose of the study is to conduct targeted histological examination on processing camel meat create technologies for new products. objects were samples quadriceps femoris from three male Bactrian camels at age 5 years, obtained during slaughter a enterprise in Almaty region Republic Kazakhstan. Selected muscle tissue fixed 10% solution neutral formalin. Conducted microstructural studies allowed establish patterns morphological changes after slaughter. It was established: absence transverse striation, slit-like violations integrity fibres, as well nuclear lysis. concluded that order develop technology quality products meat, scientifically-based methods and modes processing, use intensive mechanical effective salting are necessary.
